Irish stew is a traditional Irish dish made from lamb or mutton as well as potatoes, onions, and parsley [1] (http://homecooking.about.com/library/weekly/aa031300a.htm).

The ingredients for the dish were originally due to the fact that they were the staple foods in Ireland during the times when most of the population grew crops, and herded sheep. Nowadays different meats can be substitued for lamb, as well as other ingredients.
